Shallots are members of the onion family and come with either brown, purple or rose outer skins. They are also available in a variety of sizes from very small to large. The smaller sizes provide the true shallot flavor while the larger sizes taste somewhat generic. Generally used in dishes that are a bit more refined or delicate in taste, or where you wish the flavor of an onion but not the bulk. Use the same way as you would use an onion. Discard the peel or outer membrane. Store in a cool, dry and well vented place.
